Watermelon Mojito Mocktail

Refreshing, easy to follow, summer mocktail!

Does anyone else's toddler love a food one week and won't touch it the next? This summer, I had a week when watermelon became my toddler's new most-hated food. I had a whole ripe watermelon to find a use for. This drink was it! We had everything I needed in the fridge and it was easy to whip up in minutes.


A Watermelon Mojito is like a refreshing summer breeze in a glass! The freshly-made watermelon juice pairs perfectly with the traditional elements of a mojito. I love to enjoy this as a mocktail, but it can be easily made into a cocktail!


Watermelon Mojito Mocktail


Ingredients

  • 2 cups watermelon

  • 4 mint leaves

  • 1 tablespoon lime juice

  • 2 teaspoon simple syrup

  • club soda


Directions


  1. First, make the watermelon juice. Cut watermelon off the rind, or you can use pre-cut watermelon from the store. Put the watermelon in a high power blender. Blend until smooth.

  2. Add watermelon juice, mint, lime juice, and simple syrup to a shaker, then add ice, and either shake or stir vigorously.

  3. Pour into glass no need to strain and top with ice if needed

  4. Top with club soda

  5. garnish with mint



Notes

  • Add rum: traditionally mojitos are made with white rum. If you want to make this a cocktail add the 1.5 oz of rum into the shaker during step 2.

  • You can adjust the sweetness to your liking by adding more/less simple syrup.

  • You can always opt for fresh squeeze lime juice.

  • Try with a flavored club soda!

  • Slap your mint! This release the aroma of the mint and makes it more noticeable in the drink.
